the graphical side will suck since you don't pass a gpu to the VM (unless you do, hyper-v allows you to fragment your gpu into several partitions and assign some to a VM)

that makes sense, I had a MacOS virtual machine at some point, and it wasn't great which is prob why I forgot about vm's, but it is MacOS so I don't really know what I expected

you don't need to reserve a lot of space either, 5gb is probably more than enough but if you want to try installing various software then something like 30gb is good
